A Greek taverna in Jakobstad (Pietarsaari), Finland. Gyros carved from the spit, souvlaki off the grill, salads and mezze — cooked to order, the way a taverna should be.
Gyros comes off a turning spit as each order is made.
Tzatziki, feta, olive oil, lemon and oregano — nothing complicated.
The taverna serves guests in-house and sends food out across town.

Layered, marinated meat turns slowly against the heat until the outside crisps. Each portion is sliced off at the moment it is ordered and folded straight into warm pita — never held, never reheated.
